Mr. Army Wife’s Sloppy GI Joes!

I remember jumping for joy whenever my mother would serve up a batch of Sloppy Joe’s for us.  The version out of a can is ok, but this version combines fresh veggies and spices to create a wonderful flavor with a little bit of a kick.  It has been served to Soldiers around the country and there have never been leftovers.

Ingredients:

1 TBSP Olive Oil
1 lb ground beef
1 can diced tomatoes with juice
½ cup chopped onion
½ cup chopped green pepper
½ cup chopped red pepper
1 jalapeno chopped (optional)
2 cloves minced garlic
2 TBSP Tomato Paste
½ cup ketchup
¼ cup yellow mustard
1 TBSP honey
1 TBSP chili powder
½ TBSP cumin
¼ tsp cayenne
Salt and Pepper to taste

  1. Heat olive oil in large skillet over medium high heat. Add onion, peppers, jalapeno and garlic. Sauté until onions and peppers are soft, about 5-7 minutes.Add ground beef, chili powder, cumin, cayenne and salt and pepper. Mix together and cook until ground beef in browned.
  2. Add tomatoes, tomato paste, ketchup and mustard. Stir together. Reduce heat to simmer, cover and cook for 10-15 minutes.
  3. Serve on your favorite bread, Hamburger bun or my favorite, a toasted English Muffin.
